Main
  • 1/2 cup soy sauce
  • 1/4 cup mirin Japanese sweet rice wine
  • 3 tablespoons sugar
  • 1 tablespoon water

Equipment

  • Small saucepan
  • Measuring spoons and cups
  • Whisk or wooden spoon
  • Small glass bowl or container for storage
  • Fine mesh strainer (optional)

Method

  1. Pour 1/2 cup of soy sauce into a small saucepan over medium heat.
  2. Immediately add 1/4 cup mirin and 3 tablespoons sugar to the soy sauce.
  3. Stir gently with a whisk until the sugar dissolves completely, about 30 seconds.
  4. Pour in 1 tablespoon of water to help the sauce reduce evenly.
  5. Increase the heat slightly and bring the mixture to a gentle simmer.
  6. Let the sauce simmer for 4 to 6 minutes without stirring.
  7. Check the consistency; the sauce should coat the back of a spoon lightly.
  8. Remove the saucepan from heat and let the sauce cool for 2 to 3 minutes before using.

Notes

Use this versatile sauce on grilled fish, roasted vegetables, and rice bowls.
