Ingredients

Main
  • 4 tablespoons unsalted butter
  • 4 tablespoons all-purpose flour
  • 2 cups whole milk room temperature
  • 1/2 teaspoon kosher salt
  • 1/4 teaspoon black pepper

Equipment

  • Medium saucepan with a heavy bottom
  • Wooden spoon or whisk for stirring
  • Measuring cups and spoons
  • Knife for cutting butter
  • Measuring pitcher or liquid measuring cup for milk

Method

  1. Cut the butter into smaller pieces and place them in a medium saucepan over medium heat.
  2. Once the butter melts completely, let it foam for about 30 seconds while swirling the pan gently.
  3. Sprinkle the flour over the melted butter all at once, then stir immediately and continuously with a wooden spoon or whisk.
  4. Continue stirring the flour and butter mixture for 2 to 3 minutes until it turns light golden.
  5. Pour the room-temperature milk in gradually while whisking constantly, starting with about 1/4 cup.
  6. Continue whisking as you add the remaining milk in a steady stream for about 2 minutes.
  7. Once all the milk is incorporated, increase the heat to medium-high and bring the gravy to a gentle simmer, stirring often for 3 to 5 minutes.
  8. Add the salt and pepper, stir well, and taste for seasoning.

Notes

Serve over warm buttermilk biscuits, chicken fried steak, or creamy mashed potatoes.
