Ingredients
  

Salad
  • 2 medium Granny Smith apples cored and diced into bite-sized pieces
  • 2 stalks celery diced to match the apple pieces
  • 1/2 cup walnuts roughly chopped
  • 1/2 cup dried cranberries or raisins
  • 2 cups mixed greens or romaine lettuce optional for serving
Dressing
  • 1/2 cup mayonnaise
  • 2 tablespoons fresh lemon juice
  • 1 tablespoon honey or maple syrup
  • Salt and black pepper to taste

Method
 

  1. Core your Granny Smith apples and cut them into bite-sized pieces about three-quarters of an inch in size. Toss them with a bit of lemon juice right away to prevent oxidation and browning.
  2. Slice your celery stalks into pieces roughly the same size as your apple chunks so each bite has balanced proportions.
  3. Place your walnuts in a dry skillet over medium heat for about 3 to 4 minutes, shaking the pan occasionally to toast them and deepen their flavor.
  4. Once the walnuts cool slightly, give them a rough chop so they're in pieces rather than powder.
  5. In a small bowl, whisk together your mayonnaise, lemon juice, and honey until smooth and fully combined. Taste and adjust the sweetness or tanginess to your preference.
  6. In a large bowl, combine your apples, celery, cooled walnuts, and dried cranberries.
  7. Pour your creamy dressing over the apple mixture and fold everything together gently but thoroughly using a wooden spoon. Make sure every piece gets coated with the dressing.
  8. Add a pinch of salt and a grind of fresh black pepper, then taste a forkful. Adjust the seasoning as needed. Allow the salad to sit in the refrigerator for at least 1 hour before serving for flavors to meld.

Notes

Make this salad at least an hour before serving to allow flavors to meld, but dress it no more than 4 hours in advance or the apples and celery will become soft. Serve on a bed of crisp greens for a more substantial meal, or serve it slightly chilled in a bowl as an elegant side dish.
