Turkey Sausage
  • 1.5 pounds ground turkey 93/7 lean
  • 1 teaspoon dried sage
  • 0.5 teaspoon garlic powder
  • 0.5 teaspoon onion powder
  • 0.5 teaspoon black pepper
  • 0.5 teaspoon red pepper flakes optional
  • 0.75 teaspoon kosher salt
  • 0.25 teaspoon ground thyme
  • 1 tablespoon olive oil for cooking

Method
 

  1. Chill a large mixing bowl in the freezer for 5 minutes to keep the meat cold.
  2. In a small dish, whisk together sage, garlic powder, onion powder, black pepper, red pepper flakes, thyme, and kosher salt.
  3. Add ground turkey to the chilled bowl and sprinkle the spice blend evenly over the meat.
  4. Gently fold the turkey and spices with a wooden spoon or your hands until just combined; do not overmix.
  5. Divide the mixture into 12 equal portions and shape each into a 0.5-inch-thick patty about 2.5 inches wide.
  6. Heat a 12-inch skillet over medium-high heat and add the olive oil; let it shimmer for 1 minute.
  7. Place patties in the skillet without crowding; cook for 5–6 minutes on the first side until a golden crust forms.
  8. Flip each patty and cook an additional 5–6 minutes, or until the internal temperature reaches 165 °F.
  9. Transfer cooked patties to a paper-towel-lined plate and rest for 2 minutes to allow juices to redistribute.
  10. Serve hot, or cool and store according to preference.

Notes

For milder sausage, omit red pepper flakes; for spicier sausage, double them. Keep ingredients cold and avoid overmixing for the juiciest texture.
