  • 4 slices bacon chopped
  • 1 small yellow onion finely diced
  • 3 cloves garlic minced
  • 3 tablespoons all-purpose flour
  • 1 can 14.5 ounces diced tomatoes with juices
  • 1/2 cup heavy cream or whole milk
  • 1/2 cup chicken or vegetable broth
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon paprika
  • Pinch of red pepper flakes optional

Method
 

  1. Place the chopped bacon in a large skillet over medium heat and cook for 5–7 minutes, stirring occasionally, until the bacon is crispy and the fat is rendered.
  2. Add the diced onion and cook for 3–4 minutes, stirring frequently, until the onion is soft and translucent.
  3. Stir in the minced garlic and cook for 1 minute, stirring constantly, to avoid burning.
  4. Sprinkle the flour over the bacon mixture and stir continuously for 1 minute to create a pale roux and remove the raw flour taste.
  5. Pour in the diced tomatoes with their juices and the broth, whisking to break up any lumps and combine evenly.
  6. Increase heat to medium-high and bring the mixture to a gentle simmer, then reduce heat back to medium.
  7. Stir in the heavy cream, salt, black pepper, garlic powder, paprika, and optional red pepper flakes; simmer for 5–8 minutes, stirring occasionally, until the gravy thickens and coats the back of a spoon.
  8. Taste, adjust seasonings as needed, and serve the tomato gravy hot over biscuits, rice, mashed potatoes, or pasta.

Notes

If the gravy becomes too thick, thin it with a splash of broth or water. For a vegetarian version, replace bacon with 3 tablespoons of butter or olive oil and use vegetable broth.
