  • 2 teaspoons kosher salt
  • 1 teaspoon freshly ground black pepper
  • 2 tablespoons butter
  • 4 cloves garlic crushed
  • 2 sprigs fresh rosemary
  • 1 tablespoon avocado oil or high-heat oil

Equipment

  • Cast iron skillet or heavy-bottomed stainless steel pan
  • Meat thermometer (instant-read preferred)
  • Paper towels
  • Tongs (not a fork, which punctures the meat)
  • Cutting board for resting
  • Small bowl for butter mixture

Method

  1. Take your T-bone steaks out 30 minutes before cooking.
  2. Pat the steaks completely dry with paper towels.
  3. Season generously with kosher salt and black pepper on both sides.
  4. Heat your cast iron skillet over high heat for 3-4 minutes until it smokes.
  5. Add avocado oil to the hot pan, then place both steaks in.
  6. Let them sit undisturbed for 4 minutes.
  7. Flip the steaks and sear the other side for another 3-4 minutes.
  8. Add butter, garlic, and rosemary to the pan around the steaks.
  9. Baste the steaks continuously with the butter for 2-3 minutes.
  10. Check the internal temperature with a meat thermometer.
  11. Transfer the steaks to a cutting board and tent loosely with foil for 5 minutes before slicing.

Notes
