Ingredients

Main
  • 2 pounds about 6 cups fresh strawberries, hulled and halved
  • 3/4 cup granulated sugar
  • 3 tablespoons cornstarch
  • 2 tablespoons fresh lemon juice
  • 1/4 teaspoon salt
  • 1/2 teaspoon vanilla extract

Equipment

  • Large bowl for mixing
  • Medium saucepan with heavy bottom
  • Wooden spoon or silicone spatula for stirring
  • Measuring cups and spoons
  • Sharp knife for hulling strawberries
  • Colander for rinsing berries

Method

  1. Rinse your strawberries under cool water and pat them completely dry with paper towels.
  2. Cut off the green tops and remove any white or bruised spots from each strawberry. Halve them.
  3. In a small bowl, whisk together the sugar and cornstarch until no lumps remain.
  4. Pour the strawberries into a large bowl and sprinkle the sugar-cornstarch mixture over them. Gently fold everything together.
  5. Let the mixture sit at room temperature for 5 minutes.
  6. Pour the entire mixture (berries and juice) into your saucepan and set it over medium heat.
  7. Stir gently and continuously for 6 to 8 minutes until the mixture reaches a gentle simmer.
  8. Remove the pan from heat and stir in the lemon juice, salt, and vanilla extract.
  9. Transfer the filling to a shallow bowl and let it cool to room temperature.

Notes

Cool your filling completely before adding it to a pie crust or it will soften the crust and make your bottom soggy.
