Ingredients

For the Sandwich Base
  • 2 slices of bread sourdough, brioche, or your preferred type, each 1/2 inch thick
  • 2 tablespoons of butter melted
  • 1/4 teaspoon of salt
  • 1/8 teaspoon of black pepper
For the Filling
  • 3 ounces of protein sliced turkey, ham, roasted chicken, or your choice, at room temperature
  • 1 slice of cheese cheddar, Swiss, or provolone work beautifully
  • 2 leaves of fresh lettuce or spinach
  • 2 slices of ripe tomato
  • 1 tablespoon of mayo or spread of choice

Equipment

  • Skillet or griddle (medium to large)
  • Small pastry brush or butter knife
  • Cutting board
  • Knife for slicing fillings
  • Small bowl for melted butter
  • Spatula

Method

  1. Lay out all your fillings on your cutting board so everything is ready to go.
  2. Pour the melted butter into a small bowl and let it cool just slightly.
  3. Use your pastry brush to apply a thin, even coat of melted butter to one side of each bread slice.
  4. Place your skillet over medium heat and let it warm for about 2 minutes.
  5. Carefully place both bread slices into the hot skillet with the buttered sides facing down.
  6. Let the bread cook undisturbed for 3 to 4 minutes until it turns a deep golden brown.
  7. Remove the bread slices from the skillet and place them on your cutting board with the golden side facing up.
  8. Quickly spread your chosen condiment on the untoasted side of one slice, then layer your protein, cheese, lettuce, and tomato in that order.
  9. Place the second bread slice on top with the golden side facing outward and press down gently.
  10. Optionally, quickly butter the top slice and return it to the warm skillet for 1 to 2 minutes.

Notes

A shiny sandwich pairs beautifully with light sides like a simple green salad or a cup of tomato soup.
