Method
- Fill a large pot with 6 cups of water and bring it to a rolling boil over high heat.
- Add 1 1/2 teaspoons of salt once the water boils.
- Add your fettuccine to the boiling water and stir immediately.
- Cook for one minute less than the package instructions recommend.
- Melt 2 tablespoons of butter in a large skillet over medium heat.
- Add minced garlic and cook for 1 to 2 minutes, stirring constantly, until it starts to turn golden brown.
- Carefully pour the white wine into the skillet with the garlic, scraping up any browned bits.
- Let it simmer for 2 to 3 minutes to concentrate the flavor.
- Pour in your heavy cream and reduce the heat to medium-low.
- Stir gently and let it warm through for about 2 minutes without boiling.
- Reserve 1 cup of the starchy pasta water before draining the pasta.
- Add the drained pasta directly to your cream sauce and toss gently to coat.
- Pour in about 1/4 cup of reserved pasta water and continue tossing.
- Remove from heat and add freshly grated parmesan in two additions, tossing to melt.
- Taste and adjust salt and pepper; add remaining tablespoon of butter and red pepper flakes if desired.
Notes
Serve immediately in warm bowls, topped with extra fresh parmesan and black pepper.
