Ingredients

Main
  • 2 cans 14.75 ounces each salmon, drained and flaked
  • 1 cup breadcrumbs plain or panko
  • 2 large eggs beaten
  • 1/2 cup onion finely diced
  • 1/4 cup celery finely diced
  • 1/4 cup bell pepper finely diced
  • 1/4 cup whole milk or cream
  • 3 tablespoons mayonnaise
  • 2 tablespoons fresh dill chopped (or 1 teaspoon dried)
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon garlic powder
For the Glaze
  • 1/4 cup ketchup
  • 2 tablespoons brown sugar
  • 1 tablespoon apple cider vinegar or white vinegar
  • 1 teaspoon Dijon mustard

Equipment

  • 9x5-inch loaf pan
  • Large mixing bowl
  • Small bowl for the glaze
  • Whisk or fork
  • Measuring cups and spoons
  • wooden spoon or spatula
  • Can opener
  • Meat thermometer (optional but helpful)
  • Parchment paper or non-stick spray

Method

  1. Preheat your oven to 350 degrees Fahrenheit and line a 9x5-inch loaf pan with parchment paper or spray it with non-stick spray.
  2. Open the canned salmon and drain the liquid into a separate container, reserving a tablespoon or two in case you need extra moisture later. Use a fork to break apart the salmon into flakes.
  3. Dice the onion, celery, and bell pepper into small pieces.
  4. In a large mixing bowl, whisk together the beaten eggs, milk, mayonnaise, and reserved salmon liquid until well combined.
  5. Add the breadcrumbs, salt, black pepper, garlic powder, and fresh dill to the wet mixture and stir until the breadcrumbs absorb the liquid.
  6. Gently fold in the flaked salmon and diced vegetables using a wooden spoon or spatula.
  7. Pour the mixture into your prepared loaf pan and press it down gently.
  8. In a small bowl, whisk together the ketchup, brown sugar, apple cider vinegar, and Dijon mustard until smooth. Spread or brush this glaze evenly over the top of the salmon loaf.
  9. Place the loaf pan in the preheated oven and bake for 35 to 40 minutes, until the top is golden brown and a meat thermometer reads 165 degrees Fahrenheit.
  10. Remove the loaf from the oven and let it rest in the pan for 5 minutes before turning it out onto a cutting board.

Notes

Serve with roasted baby potatoes and steamed broccoli or make sandwiches the next day.
