Ingredients

Main
  • 1 cup roasted red peppers from a jar, drained and patted dry
  • 1/2 cup fresh parsley leaves loosely packed
  • 1/4 cup fresh oregano leaves or 2 tablespoons dried oregano
  • 3 cloves garlic roughly chopped
  • 1/2 cup extra virgin olive oil
  • 3 tablespoons red wine vinegar
  • 2 tablespoons tomato paste
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon red pepper flakes adjust to taste
  • 1/2 teaspoon kosher salt
  • 1/4 teaspoon black pepper
  • 1 tablespoon fresh lemon juice

Equipment

  • Food processor or high-powered blender
  • Cutting board
  • Sharp knife
  • Measuring cups and spoons
  • Glass jars for storage
  • Rubber spatula for scraping

Method

  1. Drain the roasted red peppers thoroughly in a fine-mesh strainer, pressing gently to remove excess liquid, then pat them dry with paper towels.
  2. Loosely pack fresh parsley leaves into a measuring cup until you reach one-half cup, then roughly chop them by hand. Do the same with fresh oregano, aiming for one-quarter cup of loosely packed leaves.
  3. Peel three garlic cloves and roughly chop them into uneven pieces about the size of a pea.
  4. In a small bowl, whisk together smoked paprika, red pepper flakes, kosher salt, and black pepper.
  5. Place drained roasted red peppers into a food processor, then add fresh parsley, oregano, and chopped garlic on top. Pour in extra virgin olive oil and red wine vinegar.
  6. Pulse the food processor five to eight times, scraping down the sides between pulses with a rubber spatula until you achieve a coarse, textured sauce.
  7. Add the tomato paste and spice mixture to the processor, then pulse another five to six times until everything combines.
  8. Squeeze in the fresh lemon juice and pulse once more to incorporate, then taste and adjust salt, vinegar, or red pepper flakes.
