Ingredients

Main
  • 4 pounds fresh pears peeled, cored, and roughly chopped (about 10 to 12 medium pears)
  • 2 cups granulated sugar
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1/8 teaspoon ground cloves
  • 1/4 teaspoon sea salt
  • 2 tablespoons fresh lemon juice
  • 1 teaspoon vanilla extract optional

Equipment

  • Large heavy-bottomed stainless steel pot (5 to 8 quart capacity)
  • Wooden spoon for stirring
  • Potato masher or immersion blender
  • Fine mesh strainer (optional, for extra smoothness)
  • Glass jars for storage
  • Food mill or blender (optional)
  • Candy or instant-read thermometer

Method

  1. Wash your pears under cold running water, then pat them dry. Peel each pear and cut them in half lengthwise.
  2. Scoop out the core and seeds, then roughly chop the pear flesh into 1 to 2-inch chunks.
  3. Place the chopped pears into the large heavy pot and sprinkle the granulated sugar over the pears, stirring well to coat.
  4. In a small bowl, combine the cinnamon, nutmeg, cloves, and salt. Add this spice mixture and lemon juice to the pot and stir to combine.
  5. Set the burner to medium heat and bring the mixture to a gentle simmer, stirring occasionally.
  6. After about 30 to 40 minutes of simmering, use a potato masher to break down the softened pear pieces into smaller bits.
  7. Reduce the heat to low and let the butter bubble gently for 1 to 1.5 hours, stirring every 10 to 15 minutes.
  8. After about 1.5 hours total cooking time, test the thickness by dropping a spoonful onto a cold plate.
  9. For a completely smooth texture, use an immersion blender to puree the mixture directly in the pot.
  10. Remove the pot from heat and stir in the vanilla extract if using. Adjust the flavor with more cinnamon or lemon juice if needed.
  11. Let the butter cool for 5 to 10 minutes before transferring to jars.

Notes

Pear butter is versatile; spread it on toast, swirl into yogurt, or use as a filling for pastries.
