- Bring a large pot of water to a boil.
- Carefully place the whole peaches into the boiling water for exactly 2 minutes.
- Remove the peaches with a slotted spoon and plunge them immediately into a bowl of ice water.
- Once cool enough to handle, use a paring knife to peel away the skin.
- Pour 2 cups of water into a large saucepan and add 1 cup of sugar.
- Stir over medium heat until the sugar dissolves completely.
- Add the split vanilla bean or vanilla extract and the lemon slices.
- Place the peeled peaches into the simmering poaching liquid.
- Poach at a gentle simmer for 15 to 20 minutes until tender.
- Using a slotted spoon, carefully remove the poached peaches and place them on a plate to cool.
- Place fresh raspberries in a fine-mesh sieve over a medium saucepan.
- Press the berries through to create a smooth sauce.
- Add 1/4 cup of powdered sugar and 1 tablespoon of fresh lemon juice to the strained raspberry puree, whisk until smooth.
- Cover the raspberry sauce and refrigerate for at least 30 minutes.
- To assemble, place a scoop of vanilla ice cream in the center of each bowl.
- Lean a poached peach half against the ice cream on each side.
- Drizzle the chilled raspberry sauce over the peaches and garnish with fresh mint if desired.
Notes
Chill your serving bowls in the freezer before assembly to keep the dessert cold longer.
