Ingredients

Main
  • 3 pounds yellow onions thinly sliced
  • 3 tablespoons butter
  • 2 tablespoons olive oil
  • 1/2 cup balsamic vinegar
  • 1/4 cup brown sugar
  • 2 tablespoons honey
  • 1 teaspoon sea salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon red pepper flakes optional
  • 2 tablespoons fresh thyme leaves or 1 tablespoon dried thyme
  • 1 bay leaf

Equipment

  • Large heavy-bottomed pot or Dutch oven
  • Sharp knife for slicing onions
  • Wooden spoon for stirring
  • Cutting board
  • Measuring spoons and cups
  • Glass jars for storage
  • Optional: immersion blender for smoother texture

Method

  1. Slice your onions into thin half-moons, about 1/4-inch thick.
  2. Heat butter and olive oil in your large pot over medium heat until the butter foams.
  3. Add all your sliced onions and stir well to coat in fat.
  4. Reduce heat to medium-low and let the onions sit undisturbed for 5 minutes.
  5. Stir every 5-7 minutes, scraping up any brown bits stuck to the bottom.
  6. Continue cooking for 45-60 minutes, stirring occasionally.
  7. Once the onions are deep caramel-colored, add brown sugar and honey, stirring constantly.
  8. Pour in the balsamic vinegar slowly while stirring.
  9. Add salt, black pepper, garlic powder, red pepper flakes if using, thyme, and bay leaf.
  10. Cook for another 10-15 minutes.
  11. Remove from heat and let cool slightly, then taste and adjust seasoning.
