  • 3 tablespoons packed brown sugar
  • 2 tablespoons softened butter
  • 1 egg yolk
  • 1/4 teaspoon vanilla extract
  • Pinch of baking soda
  • Pinch of salt
  • 2 tablespoons chocolate chips optional

Method
 

  1. In a small bowl, whisk together flour, baking soda, and salt until well combined.
  2. Add softened butter and brown sugar; mash with a fork until light and fluffy, about 30 seconds.
  3. Stir in the egg yolk and vanilla extract until no streaks remain.
  4. Fold the dry mixture into the wet ingredients just until you no longer see dry flour.
  5. Gently fold in chocolate chips or other mix-ins, if using.
  6. Transfer the batter to an 8-ounce microwave-safe mug, pressing it into an even layer and leaving at least 2 inches of space at the top.
  7. Microwave on high for 60 seconds; check the center. If still wet, continue in 15-second bursts until the top is set but the center jiggles slightly, 60–90 seconds total depending on microwave strength.
  8. Let the cookie cool in the mug for 1–2 minutes before eating to allow it to firm up.

Notes

Microwave powers vary; start with the lower cook time and add in short bursts to avoid overcooking. For a chewier texture, slightly undercook and let stand to finish setting.
