A light, elegant pasta of garlic-infused olive oil, fresh lemon, parsley, and Parmesan that comes together in under 30 minutes for a restaurant-quality meal.

Ingredients
  

Main
  • 1 pound fresh or dried pasta spaghetti or linguine work best
  • 4 cloves garlic minced or microplaned into a paste
  • 1/4 cup extra-virgin olive oil
  • 1/2 teaspoon red pepper flakes or to taste
  • Sea salt for pasta water and seasoning to taste
  • Freshly cracked black pepper to taste
  • Juice of 1–2 lemons about 2 tablespoons
  • 1 cup fresh parsley finely chopped
  • 2 ounces Parmesan cheese freshly grated

Method
 

  1. Bring a large pot of water to a rolling boil, add enough sea salt so the water tastes like the sea.
  2. Add pasta, stir, and cook until al dente according to package directions, tasting 2 minutes early; reserve 1 cup of pasta water before draining.
  3. While pasta cooks, warm olive oil in a large skillet over medium-low heat; add minced garlic and gently cook for 30 seconds until fragrant without browning.
  4. Stir in red pepper flakes and toast for 20–30 seconds to bloom their flavor.
  5. Remove skillet from heat and carefully add fresh lemon juice, stirring to combine; set aside off heat until pasta is ready.
  6. Transfer drained hot pasta to the skillet, place over medium heat, and toss while adding reserved pasta water a splash at a time (about 1/4 cup) until a light, silky sauce coats the noodles.
  7. Remove from heat, fold in chopped parsley and most of the grated Parmesan, reserving a little for serving; season with sea salt and black pepper to taste.
  8. Serve immediately in warmed bowls, topped with remaining Parmesan and an optional sprinkle of fresh lemon zest.

Notes

Best enjoyed fresh; the starch in the pasta water creates a silky sauce without cream. Adjust red pepper flakes for preferred heat level.
