Ingredients

Maple-Butter Coating
  • 3 tablespoons unsalted butter
  • 3 tablespoons pure maple syrup
  • 1 tablespoon brown sugar
  • 1/4 teaspoon salt
Pancakes
  • 1 cup all-purpose flour
  • 3/4 cup whole milk
  • 1 large egg
  • 2 tablespoons granulated sugar
  • 2 teaspoons baking powder
  • 1/4 teaspoon salt
  • 1/2 teaspoon vanilla extract
  • 2 tablespoons melted butter for batter
Sandwich Assembly
  • 8 slices bacon or 4 pork sausage patties cooked
  • 4 slices American or cheddar cheese
  • 2 tablespoons butter for griddle

Equipment

  • Large griddle or flat skillet
  • Medium mixing bowl
  • Measuring cups and spoons
  • Whisk or fork
  • Spatula
  • Skillet for cooking bacon or sausage
  • Cheese slicer or knife
  • Paper towels

Method

  1. Start by cooking your bacon slices or sausage patties in a separate skillet over medium heat until they're crispy and cooked through, about 8-10 minutes for bacon and 5-7 minutes for sausage.
  2. Combine the butter, maple syrup, brown sugar, and salt in a small bowl and stir until the mixture resembles wet sand.
  3. In a medium bowl, whisk together flour, sugar, baking powder, and salt.
  4. In a separate bowl, whisk the milk, egg, vanilla extract, and melted butter until well combined, then pour the wet ingredients into the dry ingredients and stir just until combined.
  5. Heat your griddle to medium heat (around 350 degrees Fahrenheit) for 2-3 minutes, then brush the entire surface with the maple-butter coating.
  6. Pour about 1/3 cup of batter onto the griddle for each pancake and cook for 1-2 minutes until the bottom is golden brown.
  7. Flip each pancake carefully and cook the other side for another 1-2 minutes until it's also golden brown, placing a slice of cheese on top as soon as you flip.
  8. Transfer two pancakes (with cheese side facing inward) to a plate, and sandwich your cooked bacon or sausage between them.
  9. Serve immediately while the pancakes are still hot and the cheese is melted.
