Ingredients

Main
  • 8 large eggs
  • 1/4 cup soy sauce
  • 2 tablespoons sesame oil
  • 4 cloves garlic minced
  • 1 teaspoon sugar
  • 1/2 teaspoon red pepper flakes optional
  • 1/4 teaspoon white pepper
  • 2 tablespoons water
  • 1 teaspoon rice vinegar
  • Sesame seeds for garnish

Equipment

  • Small pot
  • Bowl for ice water
  • Small mixing bowl
  • Whisk or fork
  • Spoon for peeling
  • Glass container with lid for marinating
  • Measuring spoons and cups

Method

  1. Fill a small pot with enough water to cover the eggs by about an inch. Bring the water to a rolling boil over high heat.
  2. Carefully lower the eggs into the boiling water using a spoon. Cook the eggs for exactly 7 minutes.
  3. While the eggs cook, fill a bowl with ice water and set it nearby.
  4. When the timer goes off, transfer the eggs to the ice bath immediately using a slotted spoon. Let them sit for at least 2 minutes.
  5. Gently tap and roll each egg on a hard surface to crack the shell all over, then peel under cool running water.
  6. In a small bowl, whisk together soy sauce, sesame oil, minced garlic, sugar, white pepper, water, and rice vinegar until the sugar dissolves.
  7. Place the peeled eggs in a glass container and pour the marinade over them. Cover and refrigerate for at least 4 hours.

Notes

The longer the eggs marinate, the more flavor they absorb.
