Ingredients
  

Marry Me Pasta
  • 1 pound linguine or fettuccine pasta
  • 4 cloves fresh garlic minced
  • 1 jar roasted red peppers 12 ounces, drained and chopped
  • 1 cup heavy cream
  • 1/2 cup reserved pasta water
  • 3 tablespoons butter
  • 1/2 cup grated Parmesan cheese
  • Salt and black pepper to taste
  • 1/4 teaspoon red pepper flakes optional
  • Fresh basil for garnish optional

Method
 

  1. Fill a large pot with water, bring to a rolling boil, and add a generous pinch of salt.
  2. Add the pasta and cook according to package directions, 9–12 minutes, until al dente.
  3. Reserve 1/2 cup of pasta water, then drain the pasta in a colander.
  4. While the pasta cooks, mince the garlic finely.
  5. Melt the butter in a large skillet over medium heat, add the minced garlic, and sauté for 1 minute until fragrant but not browned.
  6. Stir in the chopped roasted red peppers and cook for 2 minutes to warm through.
  7. Reduce heat to low, pour in the heavy cream, and simmer gently for 2 minutes, stirring to combine.
  8. Add the drained pasta and Parmesan to the skillet; toss for 1–2 minutes, adding reserved pasta water a splash at a time until the sauce coats the noodles smoothly.
  9. Season with salt, black pepper, and red pepper flakes to taste, garnish with fresh basil if desired, and serve immediately.

Notes

For extra protein, top with grilled chicken or shrimp. Leftovers reheat well with a splash of cream or pasta water.
