  • 1/2 cup small tapioca pearls sago
  • 3 ripe mangoes peeled, pitted, and chopped
  • 1 can 14 ounces evaporated milk
  • 1/2 cup brown sugar
  • 2 cups water for cooking pearls

Method
 

  1. Bring 2 cups of water to a rolling boil in a small pot or saucepan.
  2. Gradually add the tapioca pearls, stirring constantly to prevent sticking.
  3. Reduce heat to medium and simmer for 8–10 minutes, stirring occasionally, until the pearls turn translucent.
  4. Drain the cooked sago through a fine mesh strainer and rinse under cold running water to stop cooking; set aside.
  5. Blend the chopped mangoes with the brown sugar until completely smooth.
  6. Pour the mango puree into a bowl and stir in the evaporated milk until evenly combined.
  7. Fold the cooled tapioca pearls gently into the mango mixture.
  8. Refrigerate for at least 30 minutes before serving to allow flavors to meld and dessert to chill.

Notes

Use fully ripe mangoes for the best flavor and a silky texture. Serve chilled and enjoy within 2 hours for optimal chewiness of the tapioca pearls.
