Method
- Bring 6 ounces of fresh water to a rolling boil (about 212°F / 100°C) in an electric or stovetop kettle.
- Warm an 8–12 oz mug by filling it with some of the hot water; swirl for 10 seconds, then discard the water.
- Place the Earl Grey tea bag or infuser with loose leaf tea into the warmed mug.
- Pour the boiling water over the tea and steep for 3–4 minutes.
- Remove the tea bag or infuser, pressing gently against the side of the mug to release excess liquid without tearing the bag.
- While the tea steeps, heat 3 ounces of milk in a small saucepan over medium heat or in the microwave until it just begins to steam (about 150°F / 65°C), 1–2 minutes, then froth if desired.
- Stir 1/2 teaspoon vanilla syrup (or 2–3 drops extract) into the brewed tea until fully dissolved; add honey or sugar now if using.
- Slowly pour the hot milk into the tea while gently stirring to combine.
- Dust the surface with a pinch of ground cinnamon if desired and serve immediately.
Notes
For an iced version, prepare the drink as directed, then let it cool briefly and pour over ice.
