  • 3 tablespoons all-purpose flour
  • 2 cups whole milk or half-and-half
  • 1 cup chicken broth
  • 2 tablespoons chicken drippings or bacon grease
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon onion powder
  • 1/8 teaspoon paprika
  • Pinch of cayenne pepper optional, for heat

Equipment

  • Medium saucepan
  • Whisk
  • Measuring cups and spoons
  • wooden spoon or spatula
  • Fine mesh strainer (optional, for smooth texture)

Method

  1. Gather all ingredients and have them measured and ready before you start cooking.
  2. Place your saucepan on medium heat and add butter, letting it melt completely.
  3. Once the butter foams, sprinkle in the flour while whisking continuously to prevent lumps. Cook for 1 minute until light golden.
  4. Add chicken drippings or bacon grease to the roux and whisk well.
  5. Pour in the chicken broth while whisking constantly to break up lumps.
  6. Whisk in the milk gradually, stirring as the mixture begins to thicken.
  7. Add salt, black pepper, garlic powder, onion powder, paprika, and cayenne, whisking each in.
  8. Reduce heat to medium-low and simmer for 3 to 5 minutes until desired thickness.
  9. Optional: Pour the gravy through a fine mesh strainer for a smooth texture.
