  • 1/2 cup heavy cream
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon garlic powder
For Assembly
  • 1.5 cups shredded cheddar cheese
  • 1/4 cup green onions sliced (optional)
  • 1/4 cup bacon bits optional

Equipment

  • Large heavy-bottomed pot or Dutch oven for deep frying
  • Candy/deep-fry thermometer
  • Medium saucepan for mashed potatoes and gravy
  • Small bowl for seasoning mix
  • Shallow dish for coating the chicken
  • Tongs or slotted spoon for handling hot chicken
  • Paper towels for draining fried chicken
  • Whisk for smooth gravy
  • Potato ricer or masher for fluffy potatoes
  • Four serving bowls

Method

  1. Pat your chicken pieces completely dry with paper towels.
  2. Combine flour, paprika, garlic powder, onion powder, oregano, thyme, cayenne, black pepper, and salt in a shallow dish.
  3. Pour vegetable oil into your pot and heat it to exactly 325 degrees Fahrenheit.
  4. Coat each piece of chicken thoroughly in your seasoning flour mixture, shaking off excess.
  5. Carefully place coated chicken pieces into the hot oil, working in batches.
  6. Fry for 18-22 minutes, turning halfway through cooking.
  7. Transfer finished chicken to a paper towel-lined plate to drain excess oil.
  8. While chicken fries, boil cubed potatoes in salted water for 12-15 minutes until fork-tender.
  9. Drain well and mash with butter, cream, salt, and pepper until smooth and creamy.
  10. Melt butter in a saucepan over medium heat and whisk in flour, stirring constantly for about 1 minute.
  11. Add chicken broth slowly while whisking, then stir in cream, salt, pepper, and garlic powder. Simmer for 3-4 minutes until thick.
  12. Divide mashed potatoes among four bowls, top with fried chicken pieces, pour gravy over everything, and scatter shredded cheddar cheese on top.

Notes

For variation, try adding ingredients like jalapeños or switching to a buffalo sauce.
