Ingredients
  

Syrup
  • 2 cups water
  • 1/4 cup honey or sugar
  • 2 tablespoons fresh lemon juice
  • Optional: 1/2 teaspoon vanilla extract or 1 cinnamon stick
Fruit and Assembly
  • 2 cups watermelon small cubes or balls
  • 1 cup cantaloupe small cubes or balls
  • 1 cup pineapple small chunks
  • 1 cup strawberries halved or sliced
  • 1/2 cup blueberries or raspberries
  • 2 cups ice cubes
  • Optional: 1 cup sparkling water or ginger ale for serving
  • Optional: fresh mint leaves for garnish

Method
 

  1. Wash all fruits thoroughly and pat them dry.
  2. Cut watermelon, cantaloupe, and pineapple into bite-size cubes or melon balls; halve or slice strawberries. Leave berries whole.
  3. In a large mixing bowl, combine 2 cups water and 1/4 cup honey or sugar. Stir until fully dissolved.
  4. Stir in 2 tablespoons fresh lemon juice and optional vanilla extract or cinnamon stick.
  5. Refrigerate the syrup for 30 minutes to chill.
  6. Remove syrup from the refrigerator, discard cinnamon stick if used, and gently fold in all prepared fruits.
  7. Add 2 cups ice cubes and stir gently to keep everything cold.
  8. Taste the punch and adjust sweetness or acidity with more honey or lemon juice if desired.
  9. Ladle hwachae into serving glasses; top each glass with sparkling water or ginger ale and garnish with fresh mint just before serving.

Notes

For the best flavor, use ripe, fragrant fruits and add any carbonated beverage only at serving time to preserve the fizz.
