Homemade Vanilla Sugar

  • 2 cups granulated white sugar
  • 2 whole vanilla beans split lengthwise and seeds scraped

  • airtight glass jar (at least 2-cup capacity)

Method
 

  1. Sterilize and dry a 2-cup airtight glass jar.
  2. Using a sharp knife, split each vanilla bean lengthwise, then scrape out the seeds.
  3. Pour sugar into the jar until three-quarters full (about 1 1⁄2 cups).
  4. Add the scraped vanilla seeds to the sugar and stir with a small spoon to distribute evenly.
  5. Submerge the emptied vanilla bean pods into the sugar, then top with the remaining sugar to fill the jar.
  6. Seal the jar tightly and shake gently to mix.
  7. Store in a cool, dark place for at least 1 week, shaking every few days to promote even infusion.
  8. Use as needed, refilling with additional sugar until the beans lose their aroma (6–12 months).

Notes

For a stronger flavor, allow the sugar to infuse for up to 4 weeks before first use. Refill the jar with fresh sugar several times before replacing the vanilla beans.
