Method
- Gather and measure all whole spices and remaining ingredients before starting.
- Place a dry skillet over medium heat and toast the black peppercorns for about 1 minute, stirring constantly until fragrant.
- Add the coriander seeds and mustard seeds; continue toasting for another 1 minute, stirring to prevent burning.
- Add the whole cloves and red pepper flakes; toast for 30 seconds, then immediately transfer the mixture to a bowl to cool for 2 minutes.
- Once cooled, grind the toasted spices in a spice grinder until coarsely ground, leaving some texture.
- In a mixing bowl, combine the ground spice mixture with kosher salt, granulated garlic, and onion powder; stir thoroughly.
- Add smoked paprika, dried thyme, and crushed dried rosemary; mix until evenly distributed.
- Use a funnel to transfer the finished seasoning to an airtight jar, label with the date, and store in a cool, dark cabinet for up to 6 months.
Notes
Use about 1 teaspoon of seasoning per pound of steak, applying 40 minutes before cooking. The blend also works well on lamb, pork, vegetables, and eggs.
