Ingredients

Main
  • 1/2 cup soy sauce
  • 3 tablespoons butter melted
  • 2 tablespoons vegetable oil
  • 1 tablespoon sesame oil
  • 1/4 cup mirin sweet rice wine
  • 4 cloves garlic minced very fine
  • 1 tablespoon ginger freshly minced
  • 2 teaspoons honey
  • 1/2 teaspoon white pepper
  • 1/4 teaspoon cayenne pepper optional, for mild heat
  • Pinch of salt to taste

Equipment

  • Medium mixing bowl
  • Whisk
  • Measuring cups and spoons
  • Microplane grater or small grater
  • Glass jar with lid for storage
  • Wooden spoon

Method

  1. Lay out all your ingredients before you start mixing.
  2. Pour the melted butter into your medium mixing bowl.
  3. Add the vegetable oil and sesame oil directly to the butter, whisking gently to combine.
  4. Pour in the soy sauce slowly while whisking constantly to prevent oil separation.
  5. Continue whisking as you add the mirin until the mixture emulsifies.
  6. Add your minced garlic to the bowl and whisk thoroughly for about 30 seconds.
  7. Stir in the fresh minced ginger with steady whisking motions.
  8. Add the honey, white pepper, and cayenne (if using) to the sauce.
  9. Whisk for another 20 seconds until everything is completely combined and the sauce looks smooth.
  10. Taste the sauce and add a pinch of salt if it needs more seasoning.
  11. Pour the finished sauce into a clean glass jar with a tight-fitting lid.
  12. Seal it immediately and refrigerate until ready to use.

Notes

Let your hibachi sauce sit in the refrigerator for at least 2 hours before using it for improved flavor.
