  • 1/2 cup breadcrumbs or crushed crackers
  • 1/4 cup whole milk
  • 1 egg
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon garlic powder
  • 2 tablespoons butter or vegetable oil
For the Gravy
  • 2 large yellow onions sliced into rings
  • 2 tablespoons butter
  • 2 tablespoons all-purpose flour
  • 1.5 cups beef broth
  • 1/2 cup whole milk
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 teaspoon Worcestershire sauce

Equipment

  • Large cast-iron or heavy-bottomed skillet
  • Mixing bowl for combining beef
  • Wooden spoon for stirring gravy
  • Meat thermometer (optional but helpful)
  • Plate for resting cooked patties
  • Measuring spoons and cups

Method

  1. Combine the ground beef, breadcrumbs, milk, egg, salt, pepper, and garlic powder in a mixing bowl.
  2. Mix gently with your hands just until combined.
  3. Divide the mixture into 4 equal portions and shape each into a thick patty about 3/4 inch tall.
  4. Create a small indent with your thumb in the center of each patty.
  5. Place a large skillet over medium-high heat and add 2 tablespoons of butter or oil.
  6. Once hot, add the patties to the skillet and let them cook undisturbed for 4 to 5 minutes.
  7. Flip the patties and cook for another 3 to 4 minutes until the internal temperature reaches 160 degrees Fahrenheit.
  8. Remove cooked patties to a plate and tent loosely with foil.
  9. Add sliced onions to the same skillet and cook for 6 to 8 minutes until softened and caramelized.
  10. Push onions to the side and add 2 tablespoons of butter, melting it before adding 2 tablespoons of flour.
  11. Stir constantly for 1 to 2 minutes until it forms a roux.
  12. Slowly whisk in the beef broth and then the milk, stirring well to combine.
  13. Bring the gravy to a gentle simmer and cook for 2 to 3 minutes until thickened.
  14. Nestle the cooked hamburger steaks back into the gravy and warm through for 1 to 2 minutes.
  15. Serve immediately with extra gravy drizzled over the patties.

Notes

Hamburger steak pairs well with mashed potatoes, rice, or crusty bread, making it perfect for soaking up the rich gravy.
