Ingredients

Main
  • 4 medium plantains yellow or green depending on your preference
  • 2 cups vegetable oil for frying
  • 1 teaspoon sea salt plus more for seasoning
  • 1/4 teaspoon black pepper optional
  • 1/2 teaspoon garlic powder optional

Equipment

  • Cutting board
  • Sharp chef's knife
  • Large skillet or shallow saucepan
  • Deep-fry thermometer (optional but helpful)
  • Slotted spoon or spider strainer
  • Paper towels
  • Small bowl for salt
  • wooden spoon or spatula

Method

  1. Select and prep plantains, choose firm to slightly soft ones depending on your texture preference.
  2. Peel the plantains by cutting off both ends and making 3-4 vertical slits along the skin.
  3. Slice the peeled plantains into 1/4-inch thick diagonal or round slices.
  4. Pat the slices dry with paper towels to prevent oil splattering.
  5. Heat vegetable oil in a large skillet over medium-high heat until it reaches 350 degrees Fahrenheit.
  6. Fry plantain slices in batches for 2-3 minutes on each side until golden brown.
  7. Remove cooked plantains with a slotted spoon and drain on paper towels.
  8. Sprinkle with sea salt and any optional seasonings while hot.

Notes

Serve immediately for maximum crispiness; leftovers can be stored in an airtight container for up to 3 days.
