Method
- Pour 1 cup flour into a large bowl and set aside.
- In another small bowl, whisk together 1 cup milk and 2 eggs until the mixture is completely smooth.
- Pour the wet mixture into the flour bowl and stir gently with a whisk until just combined.
- Set your batter aside for 2 minutes while you heat your griddle.
- Set your griddle or large skillet over medium heat and add 1 tablespoon of butter.
- Flick a tiny drop of water onto the griddle; if it sizzles, you're ready to cook.
- Pour 1/4 cup of batter onto the griddle for each pancake, leaving space between them.
- Let them cook undisturbed for about 2 minutes until bubbles form on top.
- Slide your spatula under each pancake and flip it quickly.
- Cook the second side for about 1 to 1.5 minutes until golden brown.
- Place finished pancakes on a plate and cover loosely with foil to keep warm.
- Stack your pancakes on serving plates and add your favorite toppings.
Notes
Serve within 5 minutes of cooking for the best texture. Add toppings like syrup, fresh berries, or yogurt for variety.
