Ingredients

Main
  • 6 slices bacon diced
  • 8 ounces chorizo sausage removed from casing and crumbled
  • 1 pound ground beef 80/20 blend
  • 1 medium white onion diced
  • 2 jalapeño peppers seeded and minced
  • 3 roma tomatoes diced
  • 4 cloves garlic minced
  • 1 teaspoon cumin
  • 1/2 teaspoon chili powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 cup fresh cilantro chopped (optional)
  • Lime wedges for serving

Equipment

  • Large cast iron skillet or heavy-bottomed frying pan
  • Wooden spoon or spatula for stirring
  • Cutting board and sharp knife
  • Measuring spoons
  • Small bowl for mixing seasonings
  • Tongs for turning meat

Method

  1. Place your skillet over medium-high heat and add the diced bacon. Let it cook for 5 to 7 minutes, stirring occasionally, until it becomes crispy and golden.
  2. Transfer the cooked bacon to a paper towel but leave the fat in the pan.
  3. Add the crumbled chorizo to the same skillet with the bacon fat. Cook for 4 to 5 minutes, breaking it up with your spoon, until it's fully cooked.
  4. Increase heat to high and add the ground beef to the skillet. Cook for 6 to 8 minutes, stirring frequently, until the meat is fully browned.
  5. If there's a large pool of fat, carefully tilt the pan and use a spoon to skim some off.
  6. Reduce heat to medium and add the diced onion. Stir well and cook for 3 to 4 minutes until the onion softens.
  7. Add the minced garlic and jalapeño peppers, stirring constantly for about 1 minute.
  8. Add the diced tomatoes along with cumin, chili powder, salt, and black pepper. Stir and let it simmer for 3 to 4 minutes.
  9. Stir in the cooked bacon and taste. Adjust seasonings if needed.
  10. Serve immediately with lime wedges.
