Ingredients

Main
  • 3 cups frozen peas or 3 pounds fresh peas, shelled
  • 3 tablespoons unsalted butter
  • 2 tablespoons all-purpose flour
  • 1 cup heavy cream
  • 1/2 cup whole milk
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon garlic powder
  • Pinch of nutmeg

Equipment

  • Large skillet or saucepan
  • Wooden spoon or silicone spatula
  • Measuring cups and spoons
  • Colander or strainer
  • Small whisk

Method

  1. Bring a pot of salted water to a boil and add the fresh peas; if using frozen peas, thaw them by running under cold water in a colander.
  2. Pour the cooked peas into a colander and let them drain completely for a minute or two.
  3. Place a large skillet over medium heat and add the butter, allowing it to melt completely.
  4. Sprinkle the flour over the melted butter and whisk constantly for 1 to 2 minutes to create a smooth paste.
  5. Slowly pour in the heavy cream and whole milk while whisking constantly; keep whisking for about 2 minutes until the sauce thickens.
  6. Add the salt, black pepper, garlic powder, and nutmeg to the cream sauce and stir well to combine.
  7. Gently fold the drained peas into the cream sauce and stir slowly to coat each pea.
  8. Remove from heat and transfer to a serving dish immediately while hot.
