Ingredients

  • 4 lb live crawfish rinsed and purged
Spice Blend
  • 2 tbsp salt
  • 2 tbsp cayenne pepper
  • 1 tbsp black pepper
  • 1 tbsp paprika
  • 2 tsp garlic powder
  • 2 tsp onion powder
  • 1 tsp dried thyme
  • 1 tsp dried oregano
Boil Ingredients
  • 2 tbsp salt for the water
  • 1/2 tsp cayenne pepper extra for the water
  • 3 tbsp liquid crab boil such as Zatarain's
  • 6 cloves garlic smashed
  • 4 large potatoes quartered
  • 4 ears corn husked and halved
  • 1 large yellow onion quartered
  • 2 tbsp butter
  • 5 –6 gallons water

Equipment

  • Large stockpot or crawfish boiler (20 quarts or larger)
  • Wooden spoon
  • Slotted spoon or strainer basket
  • Instant read thermometer
  • Measuring cups and spoons
  • Cutting board

  • Large serving platter or newspaper-lined table

Method
 

  1. Purge the crawfish by soaking them in iced salt water for 30 minutes, then rinse thoroughly in a colander and discard any dead crawfish.
  2. Fill a 20-quart stockpot with 5–6 gallons of water and bring to a rolling boil over high heat.
  3. Stir in 2 tablespoons salt and 1/2 teaspoon cayenne pepper to season the water.
  4. In a small bowl, combine all ingredients listed under Spice Blend and set aside.
  5. Once the water boils, add the spice blend, 3 tablespoons liquid crab boil, and 6 smashed garlic cloves. Stir well and let the seasoned broth simmer for 5 minutes.
  6. Add the quartered potatoes and boil for 12–15 minutes, or until almost tender when pierced with a fork.
  7. Add the quartered onion and cook for 3 minutes, then add the halved corn cobs. Return the pot to a full rolling boil, about 3–5 minutes.
  8. Carefully add the live crawfish to the pot, stirring gently to submerge them. Cook for 5–7 minutes, until the crawfish turn bright red and begin to float.
  9. Turn off the heat, stir in 2 tablespoons butter, and let the crawfish, potatoes, and corn rest in the hot broth for 10–15 minutes to absorb flavor.
  10. Using a slotted spoon or strainer basket, transfer crawfish and vegetables to a large platter or newspaper-lined table. Serve immediately with extra broth for dipping.

Notes

Adjust cayenne pepper to suit your heat preference and keep the pot over low heat during serving to maintain temperature without overcooking the crawfish.
