Ingredients

Main
  • 12 ounces fresh cranberries about 3 cups
  • 1 cup granulated sugar
  • 1 cup water
  • 1 large orange
  • 1/4 teaspoon sea salt
  • 1/8 teaspoon ground cinnamon optional
  • Pinch of nutmeg optional

Equipment

  • Medium saucepan with a lid
  • Wooden spoon for stirring
  • Microplane zester or fine grater
  • Citrus juicer or your hands
  • Measuring cups and spoons
  • Serving bowl

Method

  1. Zest the orange using a microplane zester and juice the orange into a bowl, straining out seeds or pulp.
  2. Rinse the cranberries under cool running water.
  3. In a medium saucepan, combine water and sugar, and place over medium-high heat. Stir until the sugar dissolves (about 2-3 minutes).
  4. Add the rinsed cranberries to the pot and stir gently.
  5. Reduce heat to medium and simmer for about 10 minutes, stirring occasionally, until berries start to pop.
  6. Stir in the reserved orange zest and fresh orange juice.
  7. Add sea salt and any optional spices, then taste and adjust seasoning.
  8. Remove from heat and let cool for 10-15 minutes, then refrigerate for at least 30 minutes before serving.
