Ingredients

Main
  • 6 slices bacon chopped into small pieces
  • 2 pounds ground beef 80/20 blend works best
  • 1 large yellow onion diced
  • 4 cloves garlic minced
  • 3 tablespoons chili powder
  • 2 tablespoons ground cumin
  • 1 tablespoon smoked paprika
  • 1 tablespoon brown sugar
  • 1 teaspoon black pepper
  • 1 teaspoon salt
  • 1/2 teaspoon cayenne pepper optional, for heat
  • 2 cans 15 ounces each kidney beans, drained and rinsed
  • 2 cans 15 ounces each pinto beans, drained and rinsed
  • 2 cans 28 ounces each crushed tomatoes
  • 1 can 6 ounces tomato paste
  • 1 cup beef broth
  • 2 tablespoons apple cider vinegar
  • 1 tablespoon Worcestershire sauce

Equipment

  • Large heavy-bottomed pot or Dutch oven (at least 5 quarts)
  • Wooden spoon or sturdy spatula for stirring
  • Sharp chef's knife and cutting board
  • Can opener
  • Measuring spoons and cups
  • Colander for draining beans
  • Paper towels for blotting bacon

Method

  1. Add chopped bacon to your large pot over medium-high heat. Cook for 5 to 7 minutes, stirring occasionally, until the bacon is crispy and the fat has rendered into the pot.
  2. Remove the cooked bacon with a slotted spoon, leaving the fat in the pot, and set it aside on paper towels.
  3. Add the ground beef to the hot bacon fat in batches, breaking it apart with your spoon as it cooks. Brown for 8 to 10 minutes over medium-high heat, stirring occasionally, until most of the pink is gone.
  4. Stir in the diced onion and cook for 3 to 4 minutes until it softens and becomes translucent. Add the minced garlic and cook for another 1 minute until fragrant.
  5. Add chili powder, cumin, smoked paprika, brown sugar, black pepper, salt, and cayenne (if using) to the pot. Stir constantly for 2 to 3 minutes.
  6. Stir in the tomato paste first, mixing it thoroughly into the spices for 1 minute. Add the crushed tomatoes and stir well to combine.
  7. Pour in the drained kidney beans, pinto beans, and beef broth. Stir thoroughly to combine all ingredients, and return the cooked bacon to the pot.
  8. Reduce heat to medium-low and bring the chili to a gentle simmer. Cook uncovered for 30 to 35 minutes, stirring occasionally, until the flavors meld and the chili thickens slightly.
  9. Stir in the apple cider vinegar and Worcestershire sauce. Taste the chili and adjust salt, pepper, or spices as needed.
  10. Let the finished chili rest for 10 minutes before serving.

Notes

Top with shredded cheddar cheese, sliced jalapeños, and a dollop of sour cream. Serve alongside cornbread or crispy tortilla chips for scooping.
