Ingredients

Chips
  • 2 cups cottage cheese full-fat for best crispness
  • 1 cup shredded cheddar cheese
  • 1/4 cup grated Parmesan cheese
  • 1 egg white
  • 1 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon paprika optional

Equipment

  • Baking sheet
  • Parchment paper
  • Large mixing bowl
  • Measuring cups and spoons
  • Wooden spoon or spatula
  • Cheese grater or food processor (optional)
  • Paper towels

Method

  1. Preheat the oven to 375°F (190°C) and line a baking sheet with parchment paper.
  2. In a large mixing bowl, combine the cottage cheese, shredded cheddar, and grated Parmesan until evenly mixed.
  3. Add the egg white and stir until the mixture looks uniform and slightly sticky.
  4. Season with garlic powder, onion powder, salt, black pepper, and paprika; mix well to distribute the spices.
  5. Spoon heaping teaspoons of the mixture onto the prepared baking sheet, leaving about 1 inch of space between each mound.
  6. Gently flatten each mound with the back of a spoon to about 1/4 inch thickness to encourage crisping.
  7. Bake for 18–22 minutes, or until the edges are deep golden brown and the centers look set.
  8. Remove the baking sheet from the oven and let the chips cool on the pan for 5 minutes to finish crisping.
  9. Transfer the cooled chips to a wire rack or plate lined with paper towels before serving.

Notes

Store completely cooled chips in an airtight container in the refrigerator for up to 5 days or freeze for up to 3 weeks. Re-crisp in a 300°F (150°C) oven for 3–5 minutes if needed.
