Method
- Preheat the oven to 375°F (190°C) and line a baking sheet with parchment paper.
- In a large mixing bowl, combine the cottage cheese, shredded cheddar, and grated Parmesan until evenly mixed.
- Add the egg white and stir until the mixture looks uniform and slightly sticky.
- Season with garlic powder, onion powder, salt, black pepper, and paprika; mix well to distribute the spices.
- Spoon heaping teaspoons of the mixture onto the prepared baking sheet, leaving about 1 inch of space between each mound.
- Gently flatten each mound with the back of a spoon to about 1/4 inch thickness to encourage crisping.
- Bake for 18–22 minutes, or until the edges are deep golden brown and the centers look set.
- Remove the baking sheet from the oven and let the chips cool on the pan for 5 minutes to finish crisping.
- Transfer the cooled chips to a wire rack or plate lined with paper towels before serving.
Notes
Store completely cooled chips in an airtight container in the refrigerator for up to 5 days or freeze for up to 3 weeks. Re-crisp in a 300°F (150°C) oven for 3–5 minutes if needed.
