Ingredients

Main
  • 2 whole wheat or everything bagels split in half
  • 1 cup cottage cheese drained if watery
  • 2 tablespoons fresh dill chopped
  • 1 tablespoon fresh lemon juice
  • 1/2 teaspoon sea salt
  • 1/4 teaspoon black pepper
  • 2 slices smoked salmon optional
  • 1/4 red onion thinly sliced
  • Handful of fresh spinach or arugula
  • 2 tablespoons capers rinsed

Equipment

  • Toaster or toaster oven
  • Knife for slicing and spreading
  • Small bowl for mixing toppings
  • Plate for serving
  • Cutting board

Method

  1. Slice each bagel in half and place them cut-side up in your toaster or toaster oven. Toast for about 2 to 3 minutes until light golden.
  2. While bagels toast, spoon cottage cheese into a small bowl and stir in fresh lemon juice, sea salt, and black pepper.
  3. Remove bagels from the toaster and let cool for 30 seconds. Spread about 1/4 cup of the seasoned cottage cheese onto each bagel half.
  4. Sprinkle fresh chopped dill over the cottage cheese, then scatter thin red onion slices across the surface.
  5. If using smoked salmon, tear or fold the slices and arrange them over the onions and dill.
  6. Layer a small handful of fresh spinach or arugula over your protein layer.
  7. Scatter rinsed capers across the top for flavor.
  8. Serve immediately while the bagel is warm and crispy.
