Ingredients
  

Chipotle Vinaigrette
  • 3 chipotle peppers in adobo sauce
  • 2 tablespoons adobo sauce from the chipotle can
  • 1/4 cup red wine vinegar
  • 3 tablespoons fresh lime juice
  • 1 garlic clove minced
  • 1 tablespoon honey
  • 1/2 teaspoon ground cumin
  • 1/4 teaspoon salt
  • 1/8 teaspoon black pepper
  • 1/2 cup extra virgin olive oil

Equipment

  • Blender or food processor
  • Measuring spoons and cups
  • Whisk and mixing bowl (optional)
  • Glass jar with tight fitting lid
  • Cutting board and knife

Method
 

  1. Gather and measure all ingredients before starting.
  2. Place chipotle peppers and adobo sauce in the blender.
  3. Add red wine vinegar, lime juice, minced garlic, honey, cumin, salt, and black pepper.
  4. Blend for about 15–20 seconds, pulsing until the peppers are finely pureed.
  5. With the blender running on low, slowly drizzle in the olive oil over 30 seconds to create a smooth emulsion.
  6. Taste and adjust seasoning with additional salt, honey, or lime juice if desired.
  7. Transfer vinaigrette to a glass jar, seal, and refrigerate for at least 30 minutes before serving for flavors to meld.

Notes

Shake well before each use. Keeps up to 2 weeks refrigerated.
