Method
- Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.
- In a large mixing bowl, whisk together flour, baking powder, salt, garlic powder, and black pepper until combined.
- Add the cold cubed butter and use a pastry cutter or fork to cut it in until the mixture resembles coarse crumbs.
- Fold in the shredded sharp cheddar cheese until evenly distributed.
- Pour in the cold buttermilk and stir gently just until the dough comes together; do not overmix.
- Turn the dough onto a lightly floured surface, pat it to 1/2-inch thickness, and cut out 2-inch rounds with a biscuit cutter, reshaping scraps as needed.
- Arrange the biscuits 1 inch apart on the prepared baking sheet and place immediately in the oven.
- Bake for 10–12 minutes, or until the tops are golden brown and the biscuits have risen.
- While the biscuits bake, combine melted butter and 0.25 teaspoon garlic powder to make the topping.
- Remove biscuits from the oven and immediately brush the tops with the garlic butter. Transfer to a cooling rack and serve warm.
Notes
For extra fluffy biscuits, keep all ingredients and tools as cold as possible and handle the dough minimally.
