Ingredients

Main
  • 3 pounds chuck roast or beef chuck cut into 1.5-inch cubes
  • 6 slices bacon chopped
  • 1 large white onion coarsely chopped
  • 4 garlic cloves minced
  • 4 cups beef broth
  • 1 pound potatoes peeled and cut into 1-inch cubes
  • 2 cans 15 ounces each pinto beans, drained and rinsed
  • 2 to 3 jalapeños sliced (seeds removed for less heat)
  • Salt to taste
  • Black pepper to taste
  • 1/4 cup fresh cilantro chopped, for garnish (optional)

Equipment

  • Large heavy-bottomed pot or Dutch oven (6 to 8 quart capacity)
  • Sharp knife for cutting meat and vegetables
  • Cutting board
  • Measuring cups and spoons
  • Wooden spoon for stirring
  • Meat thermometer (optional but helpful)
  • Tongs for handling meat

Method

  1. Heat your pot over medium-high heat and add the chopped bacon. Cook for 5 to 7 minutes, stirring occasionally, until the bacon is crispy and most of the fat has rendered into the pot.
  2. Remove the bacon with a slotted spoon and set it aside on a paper towel. Pat the beef cubes dry with paper towels.
  3. Add the beef to the hot bacon fat in batches and cook for 3 to 4 minutes per side until browned. Transfer each batch to a clean plate.
  4. Add the chopped onion to the same pot and cook for 3 to 4 minutes, scraping the bottom to loosen the browned bits.
  5. Add the minced garlic and cook for another minute until fragrant.
  6. Return the browned beef to the pot along with any accumulated juices. Pour in the beef broth.
  7. Bring the liquid to a gentle simmer over medium heat and adjust the heat to maintain a quiet simmer.
  8. Once the broth is simmering, add the potato cubes and sliced jalapeños.
  9. Cover the pot partially with a lid and simmer for 45 to 50 minutes until the beef is fork-tender.
  10. At the 30-minute mark, taste the broth and add salt and pepper as needed.
  11. Stir in the drained pinto beans and reserved cooked bacon. Cook for 5 to 10 minutes until warmed through.
  12. Taste the broth and adjust seasonings before serving.

Notes

Serve with warm tortillas, lime wedges, and garnishes such as diced onion and cilantro.
