  • 2 cups wheat bran cereal such as All-Bran or 100% Bran
  • 1 1/2 cups all-purpose flour
  • 2/3 cup granulated sugar
  • 2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 2 large eggs
  • 1 1/4 cups whole milk
  • 1/4 cup unsalted butter melted
  • 1 teaspoon vanilla extract
  • 2/3 cup raisins or dried cranberries optional but recommended

Method
 

  1. Preheat the oven to 400°F (200°C) and line a 12-cup muffin tin with paper liners or coat with cooking spray.
  2. In a large mixing bowl, whisk together wheat bran cereal, all-purpose flour, granulated sugar, baking powder, baking soda, salt, ground cinnamon, and ground nutmeg until evenly combined.
  3. In a medium mixing bowl, whisk the eggs, whole milk, melted butter, and vanilla extract until smooth and slightly frothy.
  4. Pour the wet mixture into the dry ingredients and stir gently with a spatula just until no dry streaks remain; the batter should still be slightly lumpy.
  5. Fold in the raisins or dried cranberries with a few gentle strokes to distribute evenly.
  6. Scoop the batter into the prepared muffin cups, filling each about three-quarters full for even rising.
  7. Bake for 18–22 minutes, or until the tops are golden brown and a toothpick inserted in the center comes out clean or with a few moist crumbs.
  8. Cool the muffins in the tin for 5 minutes, then transfer to a wire rack to cool completely before serving or storing.

Notes

For extra-tender muffins, soak the wheat bran cereal in the milk for 5 minutes before adding to the batter. Muffins freeze well for up to 3 months; thaw overnight in the fridge or warm in the microwave for 30 seconds.
