Method
- Preheat the waffle iron for 3–5 minutes, or until it reaches full temperature.
- In a large bowl, whisk together 2 cups Bisquick, 1 tablespoon sugar, and a pinch of salt.
- In a small bowl, whisk 1 3/4 cups milk, 1 large egg, 2 tablespoons melted butter, and 1/2 teaspoon vanilla until smooth.
- Pour the wet ingredients into the dry mixture and stir just until no dry streaks remain; lumps are fine.
- Let the batter rest for 1 minute while lightly brushing the waffle iron grids with melted butter.
- Pour about 1/2 cup batter onto the center of the hot iron (about 3/4 full), close, and cook for 3–4 minutes until steam stops and the waffle is golden brown.
- Use a spatula to remove the waffle and place it on a wire rack or serving plate.
- Repeat greasing the iron lightly and cooking remaining batter, stirring the batter briefly between waffles.
- Serve waffles hot with your favorite toppings such as butter, maple syrup, or fresh fruit.
Notes
For extra-crispy waffles, reduce milk to 1 1/2 cups and cook each waffle 1–2 minutes longer.
