  • 2 lemons thinly sliced
  • 4 cloves garlic minced
  • 1 teaspoon sea salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon dried oregano
  • 1/2 teaspoon paprika
  • 2 tablespoons fresh parsley chopped
  • 1 tablespoon fresh dill chopped (optional)
  • Olive oil for the pan

Equipment

  • Baking sheet or shallow baking dish
  • Parchment paper or foil
  • Meat thermometer (optional but helpful)

Method

  1. Preheat your oven to 400 degrees Fahrenheit.
  2. Line a baking sheet with parchment paper or foil and lightly coat it with olive oil.

  4. In a small bowl, mix together the sea salt, black pepper, oregano, and paprika. Sprinkle this seasoning mixture evenly over both sides of each fillet.
  5. Place the seasoned mahi mahi fillets on your prepared baking sheet, spacing them about an inch apart.
  6. Drizzle the melted butter over each fillet and scatter the minced garlic and lemon slices on top of and around the fish.
  7. Sprinkle the chopped parsley and dill (if using) over the fillets.
  8. Place the baking sheet in your preheated oven for 12 to 15 minutes, depending on the thickness of your fillets.
  9. Remove the baking sheet from the oven and let the fish rest for 2 minutes before plating.
