Ingredients
  

Main
  • 3/4 cup fresh lime juice about 5 to 6 limes
  • 1/2 cup fresh lemon juice about 3 to 4 lemons
  • 1/2 cup simple syrup cooled (equal parts sugar and water)

  • Citrus juicer or hand juicer
  • Medium mixing bowl or liquid measuring cup
  • Whisk or spoon
  • Fine mesh strainer
  • Glass bottle or jar with tight-fitting lid
  • Funnel

Method
 

  1. Cut limes in half and juice until you have 3/4 cup of liquid.
  2. Juice lemons to yield 1/2 cup of liquid.
  3. Strain both juices through a fine mesh strainer into a mixing bowl to remove pulp and seeds.
  4. Add 1/2 cup cooled simple syrup to the strained juices.
  5. Whisk for about 1 minute until the mixture is fully combined.
  6. Taste; add more simple syrup for sweetness or a splash of lemon juice for extra tartness if desired.
  7. Using a funnel, pour the sour mix into a clean glass bottle or jar and seal tightly.
  8. Refrigerate immediately and shake before each use. Use within 2 weeks for best flavor.

Notes

Keep the sour mix chilled and protected from sunlight to preserve its bright citrus flavor. Shake gently before pouring to remix any settled juice.
