Mayak Eggs (Korean Soy-Marinated Eggs)

Ingredients
  

Eggs
  • 6 large eggs
Marinade
  • 1/3 cup soy sauce
  • 2 tablespoons brown sugar
  • 1 tablespoon sesame oil
  • 2 cloves garlic minced
  • 1 teaspoon gochugaru Korean red pepper flakes, optional
  • 1/2 teaspoon rice vinegar
  • 1/3 cup water
Garnish
  • 1 teaspoon toasted sesame seeds
  • 2 scallions thinly sliced

Equipment

  • Small pot for boiling eggs
  • Slotted spoon
  • Medium mixing bowl

  • Ice bath bowl

Method
 

  1. Fill a small pot with water, enough to cover the eggs by 1 inch, and bring to a rolling boil over high heat.
  2. Gently lower the 6 large eggs into the boiling water with a slotted spoon and cook for 6–7 minutes for a jammy yolk.
  3. Prepare an ice bath while the eggs cook by filling a bowl with cold water and plenty of ice.
  4. When the timer ends, transfer the eggs to the ice bath and chill for at least 3 minutes to stop cooking.
  5. Peel the cooled eggs under running water, starting from the wider end where the air pocket is located.
  6. In a medium bowl, whisk together soy sauce, brown sugar, sesame oil, water, minced garlic, gochugaru, and rice vinegar until the sugar dissolves completely.
  7. Place the peeled eggs in a glass jar or airtight container in a single layer and pour the marinade over them, ensuring they are fully submerged.
  8. Seal the container and refrigerate for at least 4 hours, ideally overnight, to allow the flavors to penetrate.
  9. To serve, halve or quarter the eggs, sprinkle with toasted sesame seeds and sliced scallions, and spoon extra marinade over the top.

Notes

The leftover marinade can be reused for another batch of eggs or to flavor tofu and vegetables. Store marinated eggs submerged in the fridge for up to one week.
